做法:春笋切成片后加少许盐捞出后(hòu )用清(qīng )水浸泡,生(shēng )姜切(qiē )片,葱切(qiē )成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻(fān )炒1分钟左(zuǒ )右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加(jiā )入少(shǎo )量清水(shuǐ )半掩(yǎn )住春笋,盖(gài )上锅盖大火煮开后转中火。煮(zhǔ )到水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖(mèn )。
