做法:春笋切成(chéng )片(piàn )后加少许盐捞出后用清(qīng )水浸泡,生姜(jiāng )切片(piàn ),葱(cōng )切(qiē )成段。锅烧热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油翻炒(chǎo )均匀,加入少量清(qīng )水半掩住春笋,盖上(shàng )锅盖大火(huǒ )煮(zhǔ )开后转中火(huǒ )。煮到水快熬干(gàn )的时候加入(rù )盐,翻炒均匀稍收汁时盖上锅盖焖。
