做法:春笋切成片(piàn )后加少许盐捞出后用清水浸泡,生姜切片,葱切(qiē )成段(duàn )。锅烧(shāo )热(rè ),倒(dǎo )入(rù )2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再(zài )加(jiā )入生抽(chōu )、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住春笋,盖上锅盖大火煮(zhǔ )开后(hòu )转中火。煮到水快熬干的时候加(jiā )入盐,翻炒均匀(yún )稍收汁时盖(gài )上锅盖焖。
