做法:春笋切成(chéng )片(piàn )后加少许盐捞出(chū )后(hòu )用清水浸泡,生姜切(qiē )片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻(fān )炒(chǎo )1分(fèn )钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加(jiā )入少量清水半掩住(zhù )春(chūn )笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到水快熬干的时(shí )候加入盐,翻炒均匀稍收汁时(shí )盖上锅盖焖(mèn )。
