做(zuò )法(fǎ ):春笋切成片后(hòu )加少许盐捞出后用清水浸(jìn )泡,生姜切片,葱(cōng )切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再(zài )加入(rù )生抽、老抽、蚝油翻(fān )炒均匀,加入少量清水半掩(yǎn )住春(chūn )笋,盖上锅盖大火煮开(kāi )后转中(zhōng )火。煮到水快熬(áo )干(gàn )的时候加入盐,翻炒均匀稍收汁时(shí )盖上(shàng )锅盖焖。
