做法:春笋切成片后(hòu )加少许盐(yán )捞出后用清水浸(jìn )泡,生姜(jiāng )切片,葱(cōng )切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入(rù )少量(liàng )清水半掩住春笋,盖上锅盖大(dà )火煮开(kāi )后转中火。煮到(dào )水快熬干的时候(hòu )加入盐,翻(fān )炒均匀稍收汁时盖上锅盖(gài )焖。
