做法:春笋切成片后加少许盐捞(lāo )出后用清水浸(jìn )泡,生(shēng )姜切片(piàn ),葱(cōng )切成段。锅(guō )烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片(piàn )、葱段(duàn )翻炒(chǎo )1分钟左右。再加入生抽、老(lǎo )抽、蚝(háo )油(yóu )翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大火煮开(kāi )后转中火。煮到水快熬干的时候加入盐,翻炒(chǎo )均(jun1 )匀(yún )稍收汁时(shí )盖上锅盖焖。
