做法(fǎ ):春笋切成(chéng )片后(hòu )加少(shǎo )许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热(rè ),倒(dǎo )入2勺(sháo )油(yóu ),放入生姜(jiāng )、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻炒(chǎo )均匀,加入少量清水半掩住春笋,盖(gài )上锅盖大(dà )火煮开后转中(zhōng )火。煮到(dào )水快熬(áo )干的时(shí )候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
