做法(fǎ ):春笋切成片后加少(shǎo )许盐捞出(chū )后(hòu )用清水浸泡(pào ),生姜切片,葱(cōng )切成段。锅烧热,倒(dǎo )入2勺(sháo )油,放入生(shēng )姜、春笋、牛肉片(piàn )、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入少量清水(shuǐ )半掩住春(chūn )笋,盖上锅盖大火煮开后转中火。煮到(dào )水快熬干(gàn )的时候加入盐,翻炒均匀稍收汁时盖(gài )上锅盖焖。
