做(zuò )法:春笋切成片后加少许盐捞(lāo )出后用(yòng )清水浸泡,生(shēng )姜切片,葱切(qiē )成(chéng )段。锅烧热,倒入2勺油,放入生(shēng )姜、春笋、牛肉片、葱(cōng )段翻炒1分(fèn )钟左右。再加(jiā )入生(shēng )抽(chōu )、老抽、蚝油翻炒均匀(yún ),加(jiā )入少量清(qīng )水半(bàn )掩住春笋,盖上(shàng )锅盖大火煮开后转中火(huǒ )。煮到水快熬(áo )干(gàn )的时候加入盐,翻炒均匀稍收汁时(shí )盖上锅盖焖。
