做(zuò )法:春笋切成片后加少许盐(yán )捞(lāo )出后用清水浸泡,生姜切片,葱(cōng )切成段。锅烧热,倒入2勺(sháo )油,放入(rù )生(shēng )姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻炒均匀,加入少量清(qīng )水半掩住春笋(sǔn ),盖上锅盖(gài )大(dà )火煮开后转中火。煮到(dào )水(shuǐ )快熬(áo )干的时(shí )候加入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖(mèn )。
