做法:春笋(sǔn )切成片后加(jiā )少许盐(yán )捞出后用(yòng )清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺油,放(fàng )入(rù )生姜、春笋、牛(niú )肉(ròu )片(piàn )、葱段翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春笋,盖上锅盖大火煮开后(hòu )转中火。煮到水快熬干(gàn )的时候(hòu )加入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
