做法:春笋(sǔn )切成片后加少许(xǔ )盐捞(lāo )出后(hòu )用清(qīng )水浸泡,生姜切片,葱(cōng )切成段。锅烧热,倒入2勺(sháo )油,放(fàng )入生(shēng )姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水半掩(yǎn )住春笋,盖上(shàng )锅(guō )盖(gài )大火煮开后转中火。煮到水快熬干的时候(hòu )加入盐,翻(fān )炒均匀稍收汁(zhī )时盖上锅盖焖。
