做法:春笋切(qiē )成片后加少(shǎo )许盐捞出后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉(ròu )片、葱段翻(fān )炒1分(fèn )钟(zhōng )左右。再加(jiā )入生抽、老抽、蚝(háo )油翻炒均(jun1 )匀,加入少量清(qīng )水半掩住春笋,盖上锅盖大(dà )火煮开(kāi )后转中(zhōng )火。煮(zhǔ )到水(shuǐ )快熬干的时候加入盐,翻炒均(jun1 )匀(yún )稍收汁时盖上锅盖焖。
