做法:春笋切成片后加少许盐捞(lāo )出后用清水浸泡,生姜(jiāng )切片,葱切(qiē )成段。锅烧热,倒入(rù )2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再(zài )加入生抽、老抽、蚝油翻炒均(jun1 )匀(yún ),加入少量清水(shuǐ )半掩住春(chūn )笋,盖上(shàng )锅盖大火煮开后转中火。煮到水快熬(áo )干的时候加(jiā )入(rù )盐(yán ),翻(fān )炒均匀稍收汁时盖(gài )上锅(guō )盖(gài )焖。
