做法:春笋切成片后加少(shǎo )许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒(dǎo )入2勺油(yóu ),放入(rù )生姜、春笋(sǔn )、牛肉片(piàn )、葱段(duàn )翻(fān )炒1分钟左右。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅(guō )盖大火煮开后转中火。煮到(dào )水快熬干的(de )时候加入盐(yán ),翻炒均匀稍收汁(zhī )时盖上(shàng )锅(guō )盖(gài )焖。
