做法(fǎ ):春笋切成片(piàn )后(hòu )加少许盐捞出(chū )后用(yòng )清水浸泡,生姜切片,葱切成段(duàn )。锅烧(shāo )热,倒入2勺油,放入生(shēng )姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽(chōu )、蚝油翻炒均匀(yún ),加入少量清水(shuǐ )半掩住春笋,盖上(shàng )锅盖大火煮开(kāi )后转中(zhōng )火。煮到水(shuǐ )快熬干的时(shí )候加入盐,翻炒(chǎo )均匀稍收汁(zhī )时盖上锅盖(gài )焖(mèn )。
