做法:春(chūn )笋切成片后加少许盐(yán )捞出(chū )后用清水浸泡,生姜切片,葱切成(chéng )段。锅烧(shāo )热,倒入(rù )2勺(sháo )油,放入生姜、春笋、牛肉(ròu )片(piàn )、葱(cōng )段(duàn )翻炒1分钟左右(yòu )。再加入生抽、老抽、蚝油翻(fān )炒均匀,加入少量清(qīng )水半掩(yǎn )住春笋,盖上锅盖(gài )大火(huǒ )煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀(yún )稍收汁(zhī )时盖上锅(guō )盖焖(mèn )。
