做法:春(chūn )笋切成(chéng )片(piàn )后加(jiā )少许盐捞出后用(yòng )清水浸(jìn )泡,生姜(jiāng )切片,葱切(qiē )成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉(ròu )片、葱段翻(fān )炒1分钟(zhōng )左右。再加入生(shēng )抽(chōu )、老抽、蚝油翻炒均匀,加入少量清水半掩住春(chūn )笋,盖上锅盖大(dà )火煮开后转中火。煮到水快熬干的时(shí )候加入(rù )盐,翻炒(chǎo )均匀稍收汁时盖上锅盖焖。
