做(zuò )法:春笋切成片后加(jiā )少(shǎo )许盐捞出后用清水(shuǐ )浸泡,生姜切片,葱切(qiē )成段。锅烧热,倒入2勺油,放(fàng )入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分(fèn )钟(zhōng )左右。再加(jiā )入生抽、老(lǎo )抽、蚝油翻炒均匀(yún ),加入少(shǎo )量清水半掩住春笋,盖(gài )上锅盖大火煮开(kāi )后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖(gài )上锅盖(gài )焖。
