做法:春笋切成片后加(jiā )少许盐捞(lāo )出后用(yòng )清水浸泡,生姜切片(piàn ),葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜(jiāng )、春(chūn )笋、牛肉片(piàn )、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清(qīng )水半掩住春笋,盖上(shàng )锅盖大火(huǒ )煮开后转中(zhōng )火。煮(zhǔ )到水快熬干的时候加入(rù )盐,翻(fān )炒均匀稍(shāo )收汁时盖上锅(guō )盖焖。
