做法:春笋切(qiē )成片后加少(shǎo )许盐捞出后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒(dǎo )入2勺油,放(fàng )入生(shēng )姜、春笋、牛肉片、葱段翻炒1分(fèn )钟左右(yòu )。再加(jiā )入生抽、老抽、蚝(háo )油翻(fān )炒均匀,加入少(shǎo )量(liàng )清水半掩住春(chūn )笋,盖上锅盖大火煮开后(hòu )转中火。煮到水快熬干的时(shí )候加入盐,翻炒均匀稍收汁时盖(gài )上锅盖(gài )焖。
