做法(fǎ ):春笋切(qiē )成片后加少许盐捞出(chū )后用清水浸泡,生(shēng )姜(jiāng )切片,葱切成(chéng )段。锅烧热,倒入2勺(sháo )油,放(fàng )入生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟(zhōng )左右(yòu )。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清水半(bàn )掩住春笋,盖上锅(guō )盖(gài )大火煮开后转(zhuǎn )中火。煮到水快熬干的时候加(jiā )入盐,翻炒(chǎo )均匀稍(shāo )收汁时盖上(shàng )锅(guō )盖焖。
