做(zuò )法:春笋切成片后加(jiā )少(shǎo )许盐捞出(chū )后用清水浸泡,生姜切片,葱切(qiē )成段。锅烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水(shuǐ )半掩住春笋,盖(gài )上锅盖大火(huǒ )煮开后转中火。煮到(dào )水(shuǐ )快熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖(gài )上锅盖(gài )焖。
