做(zuò )法:春笋切成片后加(jiā )少许(xǔ )盐捞出后(hòu )用清水浸泡,生姜切(qiē )片,葱切(qiē )成段。锅烧热,倒入2勺油,放入生姜(jiāng )、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水半掩住春笋,盖上(shàng )锅盖大火煮(zhǔ )开后转中火。煮到水(shuǐ )快熬干的时候(hòu )加(jiā )入(rù )盐,翻炒均(jun1 )匀稍(shāo )收汁时(shí )盖上锅盖焖(mèn )。
