做法:春(chūn )笋切成片后加少许盐捞出(chū )后用清水浸泡,生姜(jiāng )切片(piàn ),葱(cōng )切(qiē )成(chéng )段。锅烧热,倒入2勺油,放入生(shēng )姜、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清水(shuǐ )半掩(yǎn )住春笋,盖上锅(guō )盖大火煮开后转中火。煮到水(shuǐ )快熬(áo )干(gàn )的时候加入盐,翻炒均匀稍收汁(zhī )时盖上锅盖焖(mèn )。
