做(zuò )法:春笋切成(chéng )片(piàn )后加少许盐捞出后用清水浸泡,生(shēng )姜(jiāng )切片,葱切成段(duàn )。锅烧热(rè ),倒入2勺油,放(fàng )入生姜(jiāng )、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再(zài )加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上(shàng )锅盖大火煮开后转中火。煮到水快熬(áo )干的时候加(jiā )入盐,翻(fān )炒均匀(yún )稍收汁时盖上锅盖焖。
