做法:春笋切成片(piàn )后加少许盐捞(lāo )出后用清水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油(yóu ),放入生姜、春(chūn )笋、牛肉片、葱(cōng )段(duàn )翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水半掩住春笋,盖上锅盖大火煮(zhǔ )开(kāi )后(hòu )转中火。煮到水快熬干的时候加入(rù )盐,翻炒均匀(yún )稍收汁时盖上锅(guō )盖(gài )焖。
