做(zuò )法:春笋切成片后(hòu )加少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春(chūn )笋(sǔn )、牛肉片、葱(cōng )段翻炒1分(fèn )钟左(zuǒ )右。再(zài )加入生抽、老抽、蚝油翻(fān )炒(chǎo )均匀,加(jiā )入少量清(qīng )水半(bàn )掩住春笋,盖上锅盖大火煮(zhǔ )开后转中火。煮到水快熬干的时候加入(rù )盐,翻(fān )炒均匀稍(shāo )收汁(zhī )时盖(gài )上锅盖焖。
