做(zuò )法:春笋切成片(piàn )后(hòu )加少(shǎo )许盐捞出(chū )后用清水浸泡,生(shēng )姜(jiāng )切片,葱切(qiē )成段(duàn )。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再(zài )加入(rù )生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清水半(bàn )掩住春笋,盖(gài )上锅盖大火煮开后转(zhuǎn )中火。煮到水快熬干的时候加入盐(yán ),翻炒均(jun1 )匀稍收汁时盖(gài )上锅盖焖。
