做法:春笋(sǔn )切成(chéng )片后加少许盐捞出(chū )后用(yòng )清水(shuǐ )浸泡,生姜切片,葱(cōng )切成(chéng )段。锅烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老(lǎo )抽、蚝油翻(fān )炒均匀,加入少量清水半掩住春笋,盖上锅(guō )盖大火煮开后转中火。煮到(dào )水快熬干的时(shí )候加入(rù )盐,翻炒均匀稍(shāo )收汁时(shí )盖上锅盖焖。
