做(zuò )法:春笋切成片后加少许盐捞出后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧(shāo )热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽(chōu )、蚝(háo )油翻(fān )炒均匀,加入少(shǎo )量清水半掩住春笋,盖上锅盖大火煮开(kāi )后转中火(huǒ )。煮(zhǔ )到(dào )水快熬干的时候加入盐,翻(fān )炒均匀(yún )稍收(shōu )汁时盖上锅(guō )盖(gài )焖。
