做(zuò )法(fǎ ):春笋切成片后(hòu )加少(shǎo )许(xǔ )盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入(rù )2勺油,放入生姜(jiāng )、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再(zài )加入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住(zhù )春笋,盖上(shàng )锅盖大火煮开后转(zhuǎn )中火。煮到水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖(gài )焖(mèn )。
