做(zuò )法:春笋切成片后加少(shǎo )许盐(yán )捞出后用清水浸泡(pào ),生姜切片,葱切成段。锅(guō )烧(shāo )热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右(yòu )。再加入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩(yǎn )住春(chūn )笋(sǔn ),盖上(shàng )锅盖大火煮开后(hòu )转中火。煮到水快熬干的时候加入盐,翻炒均(jun1 )匀稍收汁时盖(gài )上锅盖焖。
